Cheesy beer muffins

The CtB family spent last week in Minneapolis. Thank to those who followed along on Instagram. If you missed the fun, you should definitely swing by and give me a follow!

When we got home late Friday night, all I wanted to do was sleep for 3 days. Having fun is such hard work! But, I did find the energy to make these muffins by Saturday morning. Inspired by a recipe in Banana Cream Pie Murder by Joanne Fluke, these muffins are tasty and super easy to make.

You can use any beer or cheese that appeals to you. I used a regular light lager because I’m not a big beer fan (translation: I think it’s kind of gross.) For my cheese, I had a hunk of cheddar with carmelized onions from Trader Joe’s. It added a nice depth of flavor and really complemented the beer well. I did a fine shred, but I think when I make these again I’ll do a regular shred to get more pockets of cheesy goodness.

We ate these with turkey chili, but they would be delicious with a wide variety of main dishes. Give them a try and let me know what you think!

Cheesy Beer Muffins

Inspired by a recipe in Banana Cream Pie Murder by Joanne Fluke

Servings 12


  • 2 cups baking mix
  • 6 oz beer of your choice
  • 1/4 cup water
  • 3/4 cup shredded cheese


  1. Preheat oven to 350°. Grease a muffin tin.

  2. In a medium bowl, combine all ingredients. Don’t overmix – a few lumps are okay.

  3. Fill muffin cups approximately 3/4 full.

  4. Bake for 15-18 minutes, until golden brown and an inserted toothpick comes out clean.
