Leprechaun Bars

Leprechauns may be fictional, but they still need to eat. And this family loves treats. Which you may have noticed. These are simple but super fun.

Make treats out of marshmallows and the crispy rice cereal of your choice. Throw in a few drops of green food coloring. Here comes the really fun part…Did you know you can buy those hard little cereal marshmallows all by themselves? It’s true! Grab some here at my affiliate link. Stir in about 3/4 cup of them in with the crispy cereal. Then, after you press the mixture into the pan, sprinkle another 1/4 cup or so on top and press them gently into the bars.

There are a couple ways to do the food coloring. You can add it after you melt the marshmallows and stir it in for a nice, consistent green color. The problem with this method is that some folks find green food off-putting. So, I added the food coloring with the crispy cereal. It doesn’t distribute as evenly, so you get sort of a marbleized or tie-dyed effect.
