Soup and Bread

So, last week I shared some delicious bread inspired by Nora Roberts’ Cousins O’Dwyer Trilogy (affiliate link – blah, blah, blah.) Now, as much as I enjoy bread, it was not the only thing I made, or ate, last week. A different book in the trilogy mentions bleu cheese tomato soup. Since this is a traditional recipe, it’s easy to find online. Rather than reinvent the wheel, I chose the one that sounded best and went for it. The one I landed on can be found here at Soup Chick. I made it as written and was souper (see what I did there?) excited by how it turned out. The bacon and bleu cheese add a level of flavor not found in regular tomato soup and roasting the tomatoes beforehand lends a slightly smoky undertone that complements the other ingredients perfectly.

If you enjoy tomato soup, I would highly recommend you give this one a try. It’s a bit more labor intensive than some others, but it is well worth it! I dipped my olive bread in it, but it would also be delicious with any grown-up grilled cheese sandwich.
