Yesterday was Cinco de Mayo. Many Americans celebrate Cinco de Mayo by drinking too much. In that respect, it’s much like Saint Patrick’s Day. It is also much like Saint Patrick’s Day in the respect that most Americans don’t really understand what the day is all about. I know you guys are on top of things, though, so you’ve probably looked it up and realize that it is not Mexican Independence Day but actually commemorates a Mexican military victory against France. You guys are good… Well done!
Since today is sweet Saturday I decided to try a recipe I found at 196 Flavors, one of my favorite blogs for global recipes. Their recipe for Torta de Cielo is easy to follow and delicious. I recommend Bob’s Red Mill Almond Flour. All the Bob’s Red Mill products are great, actually. And, no, I don’t get a thing for saying that. I just think they’re good stuff! I followed this recipe as written…mostly. The recipe did not mention when to add the extracts, so I added them along with the egg yolks. Also I don’t have a springform pan so I used a regular cake pan. And then I discovered that I didn’t have any slivered almonds. Unbelievable. I usually have random nuts all over the place…no comments from those that know me…Anyway…like I said, this cake is easy to make. With only one Tablespoon of flour, it would be easy to convert this to a gluten-free dessert.
This torta is really delicious. Despite being a fairly dense cake, it’s light, almond-y, and not overly sweet. It goes perfectly with coffee and you could have a slice for breakfast and not feel bad about it at all. It’s lighter than most breakfast pastries, after all. Give this one a try and then explore all the goodness at 196 Flavors. You will not be sorry!
